1889 Pizza Napoletana is born from a couple's love of both Italy and Kansas City. Kelli and Jason Kolich both studied abroad in Italy when they were at the University of Kansas.
Years passed, but their fondness of the country (and cuisine) did not. In 2013, Jason told Kelli he wanted to open his own restaurant concept, right where he grew up, in Kansas City.
Nearly three years of research, planning, training, concepting and construction culminated in the opening of 1889 Pizza Napoletana on June 23, 2016.
The duo is proud to bring authentic Neapolitan pizzas to Kansas City. What is Neapolitan style pizza? Five main components make up a Neapolitan pizza:
1) The crust is hand tossed, thin and comprised of only "00" flour, salt, water and yeast.
2) The sauce is crushed San Marzano tomatoes.
3) The cheese is fresh "fior di latte" mozzarella.
4) Each pizza gets a drizzle of extra virgin olive oil to enhance the flavors.
5) The pizzas are cooked in wood-fired hearth ovens that reach temperatures in excess of 1,000. That means they cook fast, like 90 seconds fast.
