Hudson at Waterway East

The historic Old Calypso space has been transformed into an exciting new waterfront eatery and bar overlooking the Intracoastal Waterway in downtown Delray Beach with the arrival of Hudson at Waterway East. This casually hip and trendy venue features unique spaces, including alluring nooks for dining and socializing, and an expansive covered deck, amid 7,000-square-feet of waterfront bliss.

Hudson features an innovative, seafood-centric dining menu carefully created by executive chef, season 9 Hell’s Kitchen winner Paul Niedermann. With a focus on creating seasonality in his dishes, Niedermann uses only quality ingredients such as all-natural meats, local produce and fresh, daily-caught fish.

Our team is well versed in all aspects of the restaurant business, with a particular interest in the fusion of flavors and plate presentation. Our chef-made offerings range from soups, salads and shareable starters to sandwiches and entrees. Children’s “Youngins” menu also available.

Hudson has been designed by Pam Manhas of Manhas Design and feature an eclectic, vintage-inspired aesthetic, comprising plenty of woods, tile work and brick. The open floor plan provides a variety of indoor and outdoor seating areas—including booths, high-top tables, elevated seating and bar seating—all of which offer great water views from every angle. Special features include a pizza oven and an exposed glass-front keg cooler.

There is something exciting for everyone on the urban comfort food menu, available for lunch and dinner seven days a week. With a focus on local producers and fresh ingredients, offerings range from soups, salads and shareable starters to sandwiches and entrees. The beverage program is focused on small-producer beers, spirits and wine. Modern renditions of classic cocktails, barrel-aged spirits and handcrafted cordials are some highlights of Hudson’s beverage program.
