Wine nerd Guy Sprenger is turning a turn-of-the-century building into a wine bar and small-plate bistro coming to downtown this spring. Konrad’s Wine Bar & Bistro will feature domestic wines and a chalkboard menu in an eclectic, relaxed setting.

Some of us will always worship the grape no matter how many craft breweries pop up. The goal at Konrad’s is simply to enjoy wine. Guy’s not sure how many California and Washington wineries he’s been to, but let’s just say he’s used to purple teeth.

After tasting literally hundreds of great domestic bottles, he decided to open a place that features them front and center, in an atmosphere that’s comfortable for both oenophiles and beginners. Don’t know how to say “Viognier?” That’s totally OK. Guy and the Konrad’s staff will be happy to make recommendations. If you know your juice, we’ll do our best to expand your palate with our unique selection.

Konrad’s menu will feature 60 to 70 wines, with 20 or so by the glass to give you ample opportunity to taste without totally committing.

Dining at Konrad’s will be a dynamic experience, with a rotating blackboard menu of small plates like nuts, breads and spreads, cheese boards, meat boards, skewers, spreads and dips, cured meats and sausages and desserts. We’ll also have a fixed menu of fish, fowl, soups and sandwiches flat breads and sliders to order -- no fryers, no microwaves involved. The food will be designed with wine in mind, from finger food to small meals.

If Guys’ face looks familiar, it’s because he has worked in St. Cloud’s hospitality industry for 30 years. If you recognize the building, that’s because it’s the landmark Daniel Building, part of St. Cloud’s landscape since 1915.
