The publisher most use for their coloring books don't have colorist's favorite paper in their published offerings. Many like to choose their own paper. I like card stock & my own watercolor paper that I trim to feed through my printer. Then I can paint the images when they're printed from a laser printer. Ink jet prints can run when you add the wetter coloring mediums.
