Aleppo, located in north-western Syria and one of the oldest cities on earth, was for centuries an important hub on the famed Silk Road, which linked the Middle East and East and Southeast Asia. Millions of people from all parts of the world passed through Aleppo, each adding a hint of their own land. From such influences, it is of no surprise that Aleppo is the culinary capital of Syria. The Aleppan cuisine contains influence from its rich, fertile countryside - where fine pistachios, cherries, and other fruits and nuts grow - and its neighboring civilizations – Turkish, Armenian, and Arabian to name a few. Here at Aleppo’s Kitchen, we make authentic, homemade Aleppan food, specializing in kibbeh - cracked bulgur stuffed with minced meat - and of course kebabs. حلب مدينة سورية ظلت لعدة مئات من السنين محطة مهمة على طريق الحرير، جمعت الشرق الأوسط مع شرق آسيا. ملايين من الناس مروا بحلب، وكل واحد منهم ترك فيها شيئا من بلده. بسبب هذا التأثير كان من الطبيعي أن تصبح حلب عاصمة سورية المطبخية. المطبخ الحلبي تأثر أيضا بريف حلب الخصيب وبحقول الفستق الحلبي الشهيرة وأنواع عديدة من الفواكه والحبوب. يظهر في حلب أيضا التأثير المتبادل للحضارات العربية، الأرمنية والتركية.
