In 2003 my world was turned upside down when tick bites caused me to develop the Alpha-Gal meat allergy. This allergy prohibited me from eating any more mammalian meats (beef, pork, venison, etc.). When I found emu meat as a safe red meat I could eat, my wife and I started plans to build a large emu farm in Tennessee to share this wonderful red meat with others who may have the same allergy as I do. We started digging our first fence holes in August 2012. Not only is the meat more healthful than other meats, it is also delicious. Our emus are raised without the use of hormones, antibiotics, or steroids. We aim to use farming techniques that provide maximum health to the animals without compromising the beauty of the land and the environment. No pesticides or herbicides are used in our farm operations.
