Peru is a culinary fusion of cultures, its climate has made possible the growth of a variety of vegetables, fruit, and spices (chili peppers among other products).
Ceviche, a seafood salad, it is the national dish, possibly originated in pre-Columbian times. After the arrival of the Spanish and the infusion of new elements from the old world, such as Africa, China, Italy, Japan, and the Caribbean, made possible the making of new dishes like lomo saltado (stir fry meat), aji de gallina, Parihuela anticuchos among others.
