Here at Brothers Ribs we only cook the ribs from the right side of the pig. You see when my Pa was growing up in Kentucky he noticed that pigs always rolled over on their left side to play in the mud. This made the left rack of ribs tougher then the ribs from the right side and that little known fact is still true today.
So Here at Brothers Ribs we only cook the tender ribs from the right side of the pig and we give those tough ribs from the left side to all of our competitors.
Now, you know where the term "left over" really comes from.
