It all started with The Bonewagon in 2011 when we decided to develop a food truck concept as a fun, simple way to participate in the great festivals around Colorado and provide party-goers not just great beer, but great eats as well. With our local roots and close relations to neighboring farmers, we were inspired to serve the freshest, locally-raised and thoughtfully-sourced food and craft beer available in Colorado in a fast, affordable manner. And what’s faster, craftier or more casual than a food truck? Easy, right? Well as it turns out, keeping it simple is easier said than done. After just a few months, the CHUBurger was born, The Bone Wagon had become a huge hit, and supply couldn’t keep up with demand. So in November of 2012, we broke ground on a physical location in Longmont, Colorado, and the first CHUBurger store opened in April 2013. Well we must’ve done something right, because now there’s a CHUBurger on the rooftop of Coors Field, too! #GOROCKIES

CRAFT CASUAL: At CHUBurger, our focus continues to be on providing our customers the greatest, tastiest, craftiest food they’ve had from any down-home burger joint. We don’t just do fast casual, we do CRAFT CASUAL. That means inventive burgers, crafted with skill, that you won’t find at any old fast food restaurant. From the delicious beer brewed just down the road to the Hops and Heifers Approved* Angus beef, CHUBurger makes sure your meal is handcrafted … by hand! It’s NOT fast food – it’s quality craft cuisine done fast.

CRAFT BEER: At Oskar Blues, our beer is still made by people and has been since the beginning – no robots here. As a craft casual foodery, it’s important to us that CHUBurger offers handcrafted beer to pair with our handcrafted food, which is why we source our beer from both our own Oskar Blues Brewery as well as various local and national craft breweries with similar philosophies. With 9 taps and a rotation of craft beer bottles and cans, you’re sure to find a tasty brew to complement your #urger!

FRESH INGREDIENTS: Craft casual starts with from-the-farm-fresh ingredients. Our signature CHUBurger is made with Hops and Heifers Approved* Angus beef, and is topped with smoked American cheese, crisp lettuce, ripe tomatoes, fresh red onions, crunchy pickles and house-made dressing. Our Kennebec potato fries are hand cut every day, our perfectly ripened Shishito peppers are locally-sourced, and our homemade ginger ketchup is made from scratch for your tasting pleasure. Sweet tooth? How about one of our unbelievably creamy custard shakes or a root beer float made from our B. Stiff & Sons Old Fashioned Root Beer. Make it a Hard Handshake and we’ll mix in Stranahan’s Whiskey and a topper of Old Chub Nitro!

Not a beef lover? No worries (we’ll forgive you just this once!). We know our customers have a variety of dietary preferences and needs, which is why we also offer the BERK (made with local Berkshire pork), the OMEGA (made with wild Pacific salmon), the Gonzo Garbanzo (made with veggie falafel), the Fish n’ Chips (made with crispy whitefish), the Crispy Clucker (made with Boulder Natural chicken) and the BUFF (made with fresh all-natural local bison). With such a delicious variety, you’ll wanna come back and try ‘em all!

LIVE MUSIC: We believe live music adds a fun and unique element to the ambiance of our Fooderies. At CHUBurger, we like to support hyper-local artists by giving them a casual, welcoming environment to perform in. Join us Friday nights from 6-8pm to catch ‘em in the act!
