Copper Caboose opened its doors at the corner of 4th Street and Boston Avenue in Lubbock, Texas, in 1977. Founded by John and Frank Fitzpatrick and Frank Smith, it was the first restaurant in Lubbock, Texas to serve fajitas. Copper Caboose served both chicken and beef fajitas and then added many traditional American and authentic Mexican dishes, prepared by Lupe Gonzales.
After 24 years across the street from Texas Tech's Jones Stadium, the Copper Caboose moved in June 2001 to its new location at 5609 Avenue Q, just South of the Villa Inn. Weekdays, from 11pm to 2pm, you can enjoy Lubbock's original fajitas from the all-you-can-eat fajita lunch buffet. The Copper Caboose on Avenue Q features all of your favorite Mexican dishes, along with great sandwiches, chicken strips, and a variety of traditional American dishes.
Conveniently located in Southeast Lubbock, the Caboose on Avenue Q is five easy minutes from downtown Lubbock, 10 minutes from the South Plains Mall, and only 12 minutes from Texas Tech University. The Sports Bar features 6 big screen TVs, eleven booths with individual TVs, and FREE POOL 11 AM to 7 PM everyday. The fun in Lubbock never stops at Copper Caboose.
