Cowboy Roys World Famous TEXAS Pit BAR BQ

HOWDY! I'm Roy and I'm the owner of this little BAR BQ. Our family has a farm and ranch near Estelline, which at one time was the largest cattle shipping rail head in the world. We love to smoke meat and have done so for many years for family and friends and now want to bring it to the world. I would love to MEAT you! Please stop by even if you're not hungry.

About halfway between Amarillo and Wichita Falls on 287, you'll find us in Estelline, once the largest cattle shipping point in the world.

We smoke meat and operate like an old cow-town Meat Market. I'll measure out your meat on a scale that lists a price until you say stop.

I make my own BAR BQ sauce and rubs in house. We don't put ketchup in our sauce-- I don't like corn syrup, but I do use a tomato paste base. We bottle and sell our sauce in mason jars. It is a TEXAS style sauce, which is fairly thin with some heat, and not too sweet. My rubs have no MSG-- they are all just blended spices.

All of our sides are made fresh daily in house.

I smoke meat over a real wood fire in a wood burning pit. Our briskets usually cook in about 14 hours depending on the starting weight. I am a firm believer in "low and slow" smoking. My pit is a small wood burning pit and I use a combination of Hickory and Oak in my pit. It does not take "pellets," and it is not backed up by gas or electricity.

I know that a lot of Barbecue's out there use pellets, gas and electricity to cook their meat. I prefer real wood, fire, and smoke.

Our first day open for business was Saturday November 21st, 2015.

We are a brand new business but not brand new to West Texas.

We are OPEN until 8pm OR until the meat runs out.
