Fabled Fungi LLC

Fabled Fungi LLC was created by John Guillot and Kelly Bui with a vision of providing fresh, exotic and gourmet mushrooms to Louisiana. Both John and Kelly acquired a bachelors degree in Biological Engineering from LSU and are putting that education towards something great. The 3000 sq-ft building that will be used to grow the mushrooms is being constructed by John and Kelly along with the help of family and friends. Upon Completion of the grow space, Fabled Fungi will direct their energies to production. The first strain that will be available to the public is going to be oyster mushrooms (Pleurotus ostreatus) both blue and yellow varieties. The next mushroom that will be added will be the Shiitake mushroom (Lentinula edodes). Other varieties will be added later, such as Enoki (Enokitake), Lions Mane (Hericium erinaceus), and Morels ( Morchella)
