So... I’m a foodie. This gluten free, soy free, whey free thing is kinda tricky when you’re a foodie at heart. But let me back up a little.
5 years ago my body rebelled. I was in pain, and swollen, and exhausted... all the time. They worked me up for bone cancer... multiple sclerosis... lupus... lyme disease... negative.
Thankfully!
But, I still felt awful. I couldn’t drag myself out of bed. I hurt. Everywhere. Hugs from my kids... hurt. My brain was foggy. My body was swollen. They finally settled on fibromyalgia... with IBS... with ADHD.... with depression.
And they medicated me. A lot.
For the next 3 years symptoms got worse, medications increased, and I gradually lost me. I missed myself. I missed my life.
Then I tried gluten free eating.
One week later most of my symptoms were gone. 3 weeks later the medication were gone. All of them. Kicked to the curb. I had food testing done and discovered soy and whey intolerance, too. I sent them all packing. After all, they weren’t very nice to me.
I felt alive again. Sassy even ;)
Which brings me here. Baking yummy stuff... ‘cause I’m a foodie. A complicated one, but a foodie none the less. Everything I bake is food I miss... thick pizza crust... chewy sugar cookies... donuts.
For the love of all that is awesome... DONUTS!
My hope is to bake more than just food for you, I hope you can taste the love... gluten free :)
