We are all about that 'Que!
Our owner was born and raised in Texas, went to school in Texas, then spent some time in the Carolinas after. Eric then took the styles of 'que that he grew up with and enjoyed so much, and brought those styles here to Surprise to share with all of you!
At Got Que?, we keep things as simple as possible offering only the three basic BBQ staples in texas and the carolinas; Beef Brisket, Pork Butt, and Baby Back Ribs, as well as three simple sides, Coleslaw, BBQ Beans, and Cheesy Potatoes.
We do this because we believe in following a K.I.S. philosophy in our smoke house: Keep it Simple. This philosophy when followed allows us to bring everything in fresh, smoke it whole, and only break it down into its culinary components at the very end, thereby maximising quality, flavor and wholesomeness of our product. We don't believe in pre-portioned, prepackaged, or processed products, you will not find a freezer, or a microwave in our 500 sq.ft. kitchen; we believe in using only the freshest, most wholesome product to create the highest quality food for you, our guests.
All of our meats are dry rubbed and slow smoked texas style, for a total of 14 hours on the Brisket and Pork Butt, and 5 hours on the ribs. All this is done in our three 100lb Smoke'n Tex electric element smokers. Each smoker uses about a pound of our whole block Alderwood to impart a great, mild smoked flavor.
Because of all the attention that we impart into our meats, we strive for the same effort into our sides: Cheesey Potatoes, Cole slaw, and BBQ Beans. The cole slaw is not your run of the mill, sweet mayo based cole slaw. Instead it is Eric's secret recipe, made specifically to go on top of the BBQ in true southern fashion! But it also stands alone well, as a dryer, somewhat peppery coleslaw. Our BBQ beans are a great, smoky, rich flavor using our own secret ingredients. The final side is the Cheesy Potatoes, a hot, cheesey-gooey potato casserole of sorts. This was Eric's own mother's recipe, brought here to be shared with you folks!
