Welcome to the Little Rock Cannery of Hernando County, Florida. The Little Rock Cannery is a place where Florida residents can prepare their fruits, vegetables, meats and seafood to be jarred. The cannery has the capacity to pressure can up to 96 jars at one time, along with a double water bath processor. High speed commercial food prep equipment and a gas stove/oven allow members to prepare food and fill their jars in a timely, safe, and clean kitchen setting. Professional staff are always on hand to process jars and to assist new canners as well as the many “seasoned” canners that have been canning for years. Appointments are needed. You may contact us for a tour, to schedule your canning day and to order produce for your upcoming reservation. We look forward to hearing from you!

History of the Cannery - The Cannery, established in the mid 1970’s, is housed in an historic stone schoolhouse built in the late 1930’s under the WPA and President Roosevelt. Known then as the Hammock Consolidated School, the building has since been used as a school for orphans and runaways; a cooperative extension site (Hammock Extension Homemakers); and as a northern extension site for the Hernando County Library system, called the Rock Cannery Library.

The Rock Cannery is owned by Hernando County and is now managed by the Hernando County Recreation Department
