What makes us special? Seventy five years ago, there would have been nothing special about our bread. We would have been just another neighborhood bakery using a levain
(wild yeast starter) and relying on local ingredients, time, temperature, and our hands to create a simple, but complex, loaf of bread. Today, we employ those methods from long ago, and that's what sets us apart. Making our bread is a two day process. After hand turning the dough for several hours the bread is ready to be shaped into a loaf. The loaf is left to rest overnight in a cool environment that allows the bread to slowly ferment and develop a complex taste.
Why the name Hewn? It refers to something hand shaped, having a rough or uneven surface. That pretty much sums up our bread.
What about the oven? It is an imported oven with a stone hearth and steam injection, which allows us to create a delicious crust. Because each loaf is hand shaped, each loaf is truly unique and beautiful (in our opinion).
In addition to our breads, we offer a wide range of pastries, sweets, sandwiches and espresso. Catering services are also available.
