The heart of the Ethiopian coffee ceremony is the Jebena, the pottery used to brew and pour coffee. Since customer service is paramount to owner Martha Seyoum, it was no coincidence she chose ‘Jebena’ as the name for her restaurant. In Ethiopia, hand-roasted coffee is always offered to visiting family and friends. It’s the primary social ritual that creates and maintains community.
