Los Pastes

The paste (from the Cornish "pasti" and English "pasty" ) is a British origin food introduced to the cuisine of Hidalgo . Today is a typical dish of the towns of Real del Monte (officially Mineral del Monte ) and Pachuca in the Mexican state of Hidalgo .

The Paste is filled with different combinations of ingredients. It has an analogue in the kitchen from elsewhere in the pies . For centuries, the people of Cornwall have their pastes filled with all kinds of ingredients possible.
History

The paste was added to Hidalgo , along with mining and football by engineers and contractors in Cornwall , England who worked in the mines of Hidalgo in the nineteenth century .

The original pastes, potato (potato) and corned beef, keep heat and lunchtime still kept hot, the bread trencita having on one side was used to hold them and not eat the miners and not had the opportunity to wash their hands. Today much has changed the paste, but there are still small shops that keep the original recipe and the true essence of traditional paste.
As with the case of the Mexican pizza, the paste became a process of adaptation in soil Hidalgo, nowadays is filled with paste varieties of traditional dishes of Mexican cuisine like the mole ; ingredient that distinguishes a culinary syncretism very peculiar. However, combinations of tinga and mole are best described as a pie, and their fillings are cooked before being wrapped in dough.
