WHAT ARE "LONCHES"?
The best way I know to describe "lonches" is to say that they are like mini-Mexican sub sandwiches. You start off with a small yeast roll called bolillo bread that is hot and fresh. Next you stuff the bolillo bread with chopped steak or chicken and grilled onions, all fresh off the grill. After that, you add fresh shredded cabbage, a thin slice of Roma tomato, a slice of avocado, a sprinkle of fresh diced cilantro, a few shakes of salt, a squeeze of lime(key lime preferably) and top that all off with my special Peruvian style Aji pepper sauce....and there you have a "lonche"...Bon Apetite!

HOW DID LUNCHO LIBRE BEGIN?
Luncho Libre began as an idea for a business several years ago as I encountered them in a Mexican market in Progreso, Mexico. I have been taking teams on short term mission trips to Reynosa, MX for many years. At one point we started visiting these certain street vendors that offered a sandwich like food that was unlike anything we had ever tasted. Our teams immediately went crazy for them and since that first visit to these street vendors, we have been going back for more lonches ever since. Our teams just can't get enough of them. Visiting Progreso Market to shop and eat lonches has become an integral part of our trips. After we had already been going to these vendors for a few years, it dawned on me one day that I could create a business around these little culinary wonders. It stayed in the phase of dreaming and planning and experimenting for several years, but the day came when I put all that dreaming and planning and experimenting into action.
LUNCHO LIBRE is the result. I am pleased to bring this experience to you!
