Only one place on the map incorporates this riot of sensory stimulation in its meals: India. In fact, the intensive use of spices be it whole, ground, roasted or stewed marks the unifying characteristic of an otherwise highly diverse cuisine. Characterizing Indian food is a bit like describing all the cuisine in the world at once. Indian food presents a range of flavors, intense and subtle, as vast as the country itself. Regional influences range from climate and elevation to history and religion hence they define the culinary differences which is not surprising considering Indiais a country occupying an area of 1,216,295 square miles with over 1 billion people embracing 100 different languages, cradling thousands of art forms and cultures and a million Gods, India has always welcomed new influences and among the art forms so influenced is the ancient art of Indian cooking, evolving and absorbing constantly.
