Mrs. Lackey's Pies & More

When I was a little girl, I would hover around the kitchen table where my grandma rolled out her pie crust. She was always making food from scratch and loved feeding people. Everyone loved her food too. As she rolled out the pie dough, sometimes it would stick and tear or just as she was putting it into the pie pan, it would rip in half. Then, my grandma might curse a little bit. Boy, I just wanted to get my hands on that dough and flour it up to roll it out. She'd let me too, but not as much as I wanted. I was too little. I did not like being told no, and I wanted to show my grandma that I could do it. Determination flowed through my veins and before long, (like 10 years - LOL) my grandma was asking me to make the pies and I could roll that dough out without any rips or tears. Of course I have my grandma to thank for that seed of determination that now has blossomed into a pie business. I think of her every time I roll out my dough.
