NOLAEatsGood has been working hard at local festivals selling authentic New Orleans Red Beans and Rice. Traditionally in South Louisiana, beans and rice were served on Mondays while women did the wash. They absorb flavor well, make a delicious gravy, and are rich in iron, B-vitamins, protein, and fiber.
For vegetarian/vegan options, use vegetable broth instead of water for cooking, and skip the meat. Red beans and rice are still on the menu in school lunch rooms across the southern part of the State!
