You’ve had Phở before, right? If not, it’s a wonderfully delicate Vietnamese noodle soup, commonly served with aromatic beef broth poured over rice noodles with your choice of different toppings and it comes topped with thinly sliced onions and scallions. It’s nothing short of soup perfection. The way all the spices and flavors from star anise, cardamom, fennel seeds and cinnamon come together is incredible.
Phở was born in Northern Vietnam during the mid-1880′s. The dish was heavily influenced by both Chinese and French cooking. In fact, it is believed that “Phở” is derived from “pot au feu” a French soup. Vietnamese cooks blended the Chinese, French and native influences to make a dish that is uniquely Vietnamese.
Phở Ever Bellevue opened in February 2014, is locally and family owned. Located at the heart of downtown Bellevue, Washington, Besau Phan and her husband are very honored and proud to serve Eastside residents with their family’s Vietnamese Cuisine.
