A desire to influence the status quo in the heartbeat of land flowing with coffee giants led to the creation of what is now Pines. Over thirteen years in the specialty coffee industry to his name, a love has been created and fostered for the best tasting beverage experience, socially conscious, and health centric company possible for our founder, Ryan Thompson. A company powered by adventure and wanderlust tastebuds. Pure unadulterated ingredients thrive and tastebuds are again celebrated. Coffee is treated as a culinary ingredient, paired with the most exotic flavor profiles we could think of. No artificial preservatives, fake ingredients, or corn syrup. No carrageenan, burnt beans, or mass produced sugar concoctions with caramel.

Ryan started his creative and culinary journey in 2006 with his diagnosis of Multiple Sclerosis. Several setbacks and some rough seasons ensued, forcing him to take a long hard look at what it means to be live a healthy life. Finding out the correlation with inflammation and dairy consumption as well as the side effects of an unbalanced sugar 'diet' led to the experimentation of new flavors not normally associated with coffee took a front seat. No ingredient was off limits. If coffee was going to be reinvented, boundaries being placed on it needed to be broken.

Attention to the details were vital, his journey would find out from the beginning. Transparency in all aspects of the trade were essential. No more highlighting one aspect of the coffee to fail on the backend with something else. The Black Alder is an example of our company at its finest. It was one of the first beverages that was launched. It’s recipe has changed half a dozen times in its short history! If you haven’t had the opportunity to indulge in this drink, it is a mocha with orange oil infused dark chocolate. The profile that was meant to go after, at the beginning, that similar to the chocolate covered oranges found at Christmas time. Not finding an ‘orange syrup’ led eventually to experimentation with pure cold pressed oil. It was found to retain all of its nutritional components of the orange itself while eliminating the sugar associated with fake sugar syrup. The result: instant success. A super smooth dark chocolate mocha with the taste of real oranges added but not at the expense of your gut. Soy was dropped in 2016 due to us not being able to be fully supportive and transparent about the many health effects surrounding the milk. After testing our own vegan milks continuously for over a year we finally were able to make the decision to phase out soy. In the entire process we included the public and worked relentlessly to find all customers affected coming in a comparable beverage. It’s the attention to details that makes it worth it. This isn’t just another coffee shop, it’s a movement. We want coffee and tea to be celebrated as culinary achievements, worthy of your stomach.

Along this journey we have included the public. Our team is always tasting beverages to ensure quality and listening to feedback. If a beverage is generating response of too bitterness, sour, or unappealing all our energy is put into more research and development. Our goal is to have the customer an active participant in the drinks we create.
