Our special cuisine refers to the cuisine of Gujarat, India, a state in the western part of India. Primarily it is a vegetarian cuisine due to the influence of Jain vegetarianism and traditional Hinduism. The typical Gujarati Thali comprises of Rotli, Dal or Kadhi, Rice, and Shaak/Sabzi (a dish made up of different combinations of vegetables and spices, which may be spicy or sweet). Gujarati cuisine is very diverse in flavor, depending on the part of Gujarat in which the dish is prepared. North Gujarat, Kathiawad, Kachchh, and Surti Gujarat are the four major regions of Gujarat that all have their own distinctive styles of food preparation. A distinct characteristic of many Gujarati dishes, is the fact that they may be sweet, salty, and spicy at the same time, which gives a aromatic flavor experience.
