Requin is a French Mediterranean concept by chef and restaurateur Mike Isabella.
Pulling flavors and influences from the Mediterranean coast of France, Carroll’s seafood-heavy menu features small plates like celery root pastrami, a cold- and hot-smoked vegetarian version of the deli classic; mussel & clam escabeche with sweet bell peppers, citrus, sherry vinegar and evoo; and specially imported wild burgundy snails sautéed in a garlic mushroom broth and served en croute in a puff pastry shell. Large family-style dishes include grilled whole fish that changes with market availability and comes paired with broccolini shallot confit and smoky tomato butter; and roasted chicken with pommes puree, roasted vegetables and truffled chicken jus. Sweet and savory endings like chocolate soufflé, profiteroles and a daily cheese selection round out the meal.
