Philosophy
Chef Umberto Orlando shares his philosophy of Italian cuisine with each dish on the menu. That philosophy is that you can never know everything! When he and the Orlando family returned to the United States after a sojourn to Italy, he brought with him a refreshed and enthusiastic vision for creating a dining experience that embraces today's fast casual elegance and incorporates old world Italian cuisine.

When Umberto, Marina and Cristiano settled into Umberto's home town in Italy, intending to take some time off from the restaurant business, within weeks, he changed his mind and opened a restaurant and spent several months studying with some of the best chefs in Italy.

The Il Volo menu represents Chef Umberto's updated view on rustic authentic Italian cuisine prepared with imported Italian ingredients combined with the best of local farm to table produce. Curing his own meats, house-made sausage, breads and desserts keeps Umberto's kitchen going hours before Il Volo opens each day. And there is always something new coming from that creative chef's mind!

Chef Umberto wants each dish to bring a smile and sign of satisfaction while creating a flight (Il Volo) that is perfectly paired to satisfy your palate and inspire you to try something else on the menu. The taste adventure begins...one dish at a time.

About

When Chef Umberto decided to return to Redlands, of course an authentic Italian restaurant was the choice, but he wanted to bring a fresh approach to dining out. He chose the trattoria style, yearning to return to his Italian roots of simple food that pleases the palate and nurtures the soul. Importing many ingredients directly from Italy is something Chef Umberto insists upon while incorporating fresh farm to table produce that is fortunately available within the Redlands and Inland Empire area. That extra special attention to sourcing authentic Italian ingredients and using fresh produce keeps the Il Volo menu exciting yet traditional.

When deciding upon a name for his latest eatery, Chef Umberto wanted to create a place where his imagination would bring exquisitely simple food to your table that would delight your palate. He settled on "Il Volo," which translates as "The Flight." He has envisioned a menu that is imaginative and unrestrained, while filled with tradition and familiar tastes. Chef envisioned a food flight (think of beer flights) where each dish is a compilation of taste sensations that meld together the herbs and spices to bring out the best flavor. From the three and four ingredient panini sandwiches served on house-made artisan bread, to the simply elegant grilled Colorado lamb, every dish, from appetizer to dessert takes you on a flight of fancy. All the while, grounded in authenticity that can only come from an Italian heritage.

In Italian, "trattore" is the word for an innkeeper or restaurant owner. That word derives from the Old French verb traitier, which means "to treat" and is related to the Latin tractare, meaning "to drag about, handle, or deal with." "Trattoria," which first appeared in English in 1832, is one of several words that have entered our language to refer to a kind of specialized eatery - in this case, one that specializes in Italian cuisine.

A Family Affair
Chef Umberto and his wife Marina Orlando, along with their son, Cristiano, make Il Volo a true family business, with a salute to the old country and embracing today's casual elegent dining trend. Il Volo is an Orlando family project from the ground up.

The family put love and hard work into creating the inviting and relaxed atmosphere that is Il Volo. Umberto and Cristiano did most of the renovations including the dining tables, recovered walls and ceilings, the stunning restored bar, updated flooring, recovered leather booths and more. In keeping with the desire to make Il Volo an integral part of Redlands and the Inland Empire, custom glass windows and murals by local artist Christine Coates offer an inspired and unique comfortable, homey place to dine, meet up for a drink, hold a business meeting or family event.
