Walter (Wally) Hetrick was born in Europe, traveled the world as an Air Force brat, and spent his teen years in Louisiana where he got a job in a barbecue joint. It was love at first bite. Over the years he's had flings with various styles of cuisine, but he always came back to barbecue. While its southern heritage is apparent, you will also taste a hint of European sensibility and New England sass in every bite. So come on down, take a bite, fall in love.
