Nicki Kerbs, pastry chef at Rodeo Donut, is the master behind this idea. “We want to change the way Seattle looks at donuts by starting over and building it the way we want to enjoy a donut. Brioche dough that’s so light and not too sweet, glazes that are made fresh daily from fresh ingredients and building mouth-watering flavor concoctions that go so far beyond a maple bar or apple fritter.
