Sancho’s Mexican was founded by local business entrepreneur Shawn Camden and his team of expert cooks from Mexico:

Jose Serna, Arturo Sanchez, and Jesus. We work as a team to come up with the tastiest and most authentic Mexican food in Boulder.

We guarantee fresh tasting food as everything is made from scratch with the best quality ingredients.

Sancho’s Mexican is best known for its authentic style street food, namely our tacos, tortas, and gorditas and our freshly made signature salsas.

If you miss the authenticity in the word “Mexican,” then you will find it once again at Sancho’s Mexican. It’s the real deal!

So what makes Sancho’s Mexican different?

It is a number of things… Our food is authentic Mexican food because we make it the same way that food is traditionally made in Mexico! There are many Mexican food restaurants in the Boulder area but Sancho’s Mexican stands alone because we are not a franchise. We are the small restaurant that you tell all of your friend’s about but more importantly we are the only ones who are crafting AUTHENTIC Mexican dishes!

Salsa

Our salsas at our restaurant are made from the freshest ingredients. We have 5 signature salsas ranging from a mild Pico De Gallo to salsas that will leave you with a really nice burning sensation. In case you don’t know….don’t try to put the fire from these babies out with water instead use our chips and tortillas to quench the burn that you’ll be feeling!

Staff

Our hard working staff is always striving to make sure that you have the best dining experience that you can have in all of Boulder. Many of our customers come back again and again because our staff is friendly and makes sure that they leave with a great experience.

Hidden gem! I almost don’t want to review it to keep it in obscurity but the food is so damn good everybody needs to know! Yea we have chain Mexican restaurants up here, but since Mamacitas and Juanitas went away there hasn’t been that hole in the wall Mexican joint in Boulder that is locals only.

Don’t let the circa 1979 strip mall fool you, the food is serious and the employees are extremely nice. The menu is extremely diverse and the ingredients fresh; there are a few things I don’t mess around with and Mexican food is one of them. By far the BEST Mexican restaurant in town; I recommend the smothered Sancho burrito and a chicharron gorditas… mmmmmmmmmmm.

Ole! This is the Mexican restaurant that Boulder has been missing! After living here for 6 years I’ve been frustrated with the Mexican offerings. I’m always disappointed by places like Rio where you seem to pay a lot for the atmosphere and the food is bland and underwhelming.

Sancho’s is AMAZING. Really good flavor and spice (with a salsa bar!) — the meat is cooked well and the fresh fruit juices are supreme-o. It’s an unpretentious but very clean, lovely space. The patio faces a parking lot, but they’ve made it a nice place to eat by adding flowers and colorful banners– the view of the flat irons is top notch.

If you’re craving solid, authentic, affordable Mexican food in Boulder, this is your place. So glad I went!
