Sushi, in essence, is a very simple Japanese cuisine composed of limited ingredients including fish, wasabi (Japanese horseradish), and shari (sushi rice). Because of this the freshness of the fish, how the rice is cooked, mixture of vinegar and size of the shari are very important in making sushi of the quality and taste found in Japan.
