The Pura Vida Food Truck

Once there was a young couple that had a dream to run a food truck. She was 34 and he was 27. The young couple purchased a P30 Chevy truck . Within days, the truck was equipped with a 4 burner stove and griddle, an extra griddle, a twin deep fryer, three compartment sink and hand wash sink, refrigerated sandwich unit with salad prep cutting board, a freezer, heating lamps, commercial coffee maker, and an 8 tray warming/holding unit. The young man went as far as mounting his own hood/ventilation system. The young lady was working on getting her food handlers license so that they could legally operate their food truck.
The food truck seemed to be a great opportunity for this young couple to run their own business and fulfill their dream but for many reasons, it didn't happen for them.
The young man chose to sell the truck. He listed it for sale on Craigslist. Interestingly enough, I too had an ad on Craigslist. His ad was listed in New Jersey and my ad was listed in Westchester, New York. He asked me if I was interested in purchasing a food truck and I said no but that I would be more than willing to operate it.
He gave me the truck. For free !
And here I am working on making The Pura Vida Food Truck come to life :)
"Pura Vida" means "Pure Life."
It is a Costa Rican saying and it means so much more :)
