Rocky Ground Cider

Our falls are spent searching for apples that are high in sugar, low in acid, and full of tannins. We press the juice here in Newburgh. It goes into wooden barrels in the cellar and then wild yeast do the rest. Every batch is unique, changing from year to year based on the apples that are available.
